Sift together
2 cups flour
1 tsp. salt
1 nutmeg grated
Mix together
4 tbsp. butter melted
4 tbsp. milk
1 tsp. soda
6 tbsp. sugar
4 eggs, unbeaten
Mix the sugar, eggs and butter together until thoroughly blended. Mix in the flour, adding more if needed to make a soft dough. Roll thin, cut into small biscuits and fry to a golden brown in boiling fat. Drain on brown paper and roll in sugar.
Culpepper Oatmeal Cakes
Sift together
2 cups flour
2 cups rolled oats
1/2 tsp. salt
1 cup sugar
1/3 cup butter
2/3 cup lard
2 tbsp. milk
2 egg yolks, unbeaten
2 egg whites, beaten stiff
1 lb. raisins
1 tsp. vanilla
Dissolve in
1 tbsp. hot water
1 tsp. soda
Cream the butter, lard and sugar together. Add the egg yolks and blend well. Add the milk, vanilla and soda and stir until creamy. Add the raisins and fold in the egg whites. Add the flour and rolled oats and mix quickly and lightly. Drop into small cakes and bake at 450F for about ten minutes.
