Beurrik (Cheese Sticks)
1/2 lb. Gruyere cheese
puff pastry
3 tbsp. thick white sauce
Cook the cheese and white sauce together until thick. Chill thoroughly and shape into three-inch rolls the size of a pencil. Roll the puff paste very thin. Wrap the cheese in strips of pastry and fry in hot fat. Drain on brown paper.
Beverwyks (Spice Cakes)
Sift together
3 cups flour
1 tsp. each: cloves, allspice, cinnamon
1 cup butter, softened
11/2 cups sugar
3 eggs, unbeaten
Mix with 1 cup raisins, chopped
Add the sugar and eggs to the butter and beat well. Add the other ingredients and mix quickly, using more flour to make a dough that will roll. Roll one-fourth inch thick, cut into small cakes and bake at 350F until light brown.
